Abstract：
Here, modifications of sustainable carbohydrates at diverse dimensions, either as polymers or as nanostructures, for functional materials will be presented.

Kai Zhang is Professor, Head of the Department for Wood Technology and Wood-based Composites, and Executive Director of Biotechnology Center of Faculty of Forest Sciences and Forest Ecology, Georg-August-University of Göttingen, Germany.
Kai Zhang received his B.S. (2002) in Food Science and Technology in Hefei University of Technology (China), his Diplom (2007) in Food Chemistry and Ph.D. (2011) in Chemistry (Plant and Wood Chemistry) in Dresden University of Technology. After research stations at Dresden University of Technology, the Pennsylvania State University, and Darmstadt University of Technology, he joined the University of Göttingen in 2015. He has been appointed as Assistant Professor in Chalmers University of Technology, Sweden, and Junior-Professor in Free University Berlin, Germany in 2015. He serves currently as editorial board member of ‘Smart Materials in Medicine’ and ‘Scientific Reports’. He was Associated Editor of ‘Hydrogels’ and editorial board member of ‘Journal of Semiconductors’. He carried out a number of projects, such as from EU, German Science Foundation (DFG), Federal Ministry of Food and Agriculture, Federal Ministry of Economics and Energy, Alexander von Humboldt Foundation, Lower Saxony Ministry of Science and Culture, and German Chemical Industry Association and so on. He published more than 120 papers, such as in Nature Sustainability, Angewandte Chemie Int Ed, Advanced Materials, ACS Energy Letters, ACS Nano and Advanced Functional Materials.
